California Dreaming

This past weekend we went down to California to go to an information session for Ross (the med school in the Caribbean we'll be going to), and it was a convenient excuse to go see Grandma and Grandpa Nebeker. We had so much fun that it was hard to come back to the snowy Utah weather, and I was in fact dreaming of California several times today. June will be our last month in Provo, then we'll be packing up our stuff, putting it in storage, and switching off between Manti and California for the summer. Let me just say I am little anxious for June to be here! After our meeting we are both feeling really good about our decision to go to Ross, and are excited to start this new adventure!

Shane went on his first plane ride, and did very well. I think we have a little flirt on our hands though, he was putting on a show for everyone around us!

He never would roll over for them though. He did it for us 5 times one night last week, but has yet to do it again. His expression tells you just how he feels about tummy time...




And Josh would like you all to know that he has redeemed himself in the kitchen. After his little Crisco fiasco, he managed to make these delicious homemade donuts, gluten free and all. He also made some delicious Thai-chicken wraps with homemade peanut sauce. You better watch your back Kevin!

I'm Such a Nerd!

So every other day I do journals with my class, where they can write about whatever they want and then they have a day where they get to share something they've written. Sometimes the things they write are so darn creative and funny that I find myself wanting to be creative too. So, in honor of St. Patrick's Day, and for lack of much to blog about, I have written a cheesy limerick about each of us.

Josh is a stay at home dad
The best one anyone's had
He likes surfing the net
Calms Shane when upset
And misses his wife like mad

There once was a girl named Kelly
Who was trying to lose her belly
She ran and did wii
Tried eating healthy
But really just wants Ghiradelli!

There once was a boy named Shane
Whose teeth were causing him pain
He'll chew on your finger
He's become quite the singer
I'm glad he's not made us insane!

Shane's Blessing

We blessed Shane on Sunday and were lucky to have a lot of our family here for it. I just love his little outfit, Josh was blessed in it and thankfully Josh was a big baby so it fit Shane (or maybe ot thankfully, I think I am doomed to have big babies!)

Shane looks a little funny in these pictures but he was out cold. I highly recommend a Swaddleme blanket to anyone!
Afterwards we went back to our house and had lunch. Somehow we managed to fit 17 people into our tiny basement! We made one of my favorites, Kalua Pork. It was my first time feeding that many people and I was a little nervous but I think everyone managed to get full. It is super easy, I put the recipe at the bottom.
Shane had a lot of fun meeting all his cousins and getting held nonstop, and we enjoyed the company!



Kalua Pork:
1 package boneless pork ribs (about 2 1/2 lbs. I use the country style kind cause it's the cheapest and it works great)
3-4 tbsps liquid smoke
1 tbsp salt
1 cup water
cook in crockpot on high for 6-8 hours, shred when done and serve over rice

Blue-blooded

I'm not talking about the aristocratic kind of blue blood, but the kind of blue blood that means you're a die-hard BYU fan. Josh and I have unabashedly tried to encourage Shane to be a BYU fan ever since he was in the womb and we started taking him to football games. We sing him the fight song (he loves it!), put him in little BYU onesies, and even bought him a little stuffed cougar. So we couldn't let the basketball season pass without taking him to one of the games, and not just any game, but the Utah game. Don't let the picture fool you, that was the only wink he slept the whole game! It was a little too much stimulation for a 2 1/2 month old so we left at halftime- if you've ever been in the student section at a rivalry game, you know what I'm talking about.

And let me take the chance to publicly express one of my biggest pet peeves- girls who think they can stand on the bleacher when everyone else is standing on the floor! They are usually not that short to begin with, and then noone else can see a dang thing! Phew, glad I got that one out, and glad that BYU beat Utah!
